Sweet Potato and Borlotti Bean Burgers

Ingredients:

  • 3 medium sweet potatoes
  • 1/2 a Red pepper
  • 1 small Red onion
  • small handful of parsley or coriander
  • 1 can of Borlotti beans
  • Cumin
  • Paprika
  • Turmeric
  • Salt
  • Pepper
  • Garlic powder
  • Chilli flakes
  • Cup of cooked quinoa

This makes approximately 6 burgers..

For a delicious burger sauce, mix smashed avocado with hot sauce or mustard..

What you need to do:

Peel and boil the sweet potatoes for approximately 20 minutes so that they’re soft but not too soft. Drain them off and let them cool down and dry out.. Also boil the quinoa for 10-12 minutes and then leave to cool.

Chop or pulse in a blender the red pepper and onion and then saute for a few minutes.

Drain and rinse the borlotti beans and transfer all ingredients to a big bowl.. Give it a good mix.. Taste test the mixture to season to your required preference.

Shape into patties and fry for a couple minutes each side, then put in the oven on 180 for 20-25 minutes.

Stuff your burger buns with whatever you like.. Lettuce, spinach, cucumber, tomatoes, gherkins, jalapeƱos.. The choice is yours.

I like to add some extra mustard too!
