So this Strawberry Chia Pudding can be eaten at any time of day.. I like having it for breakfast or as a dessert.
Chia seeds are one of my favourite superfoods and are full of nutritional benefits. They are rich in omega-3 fats, iron, protein, fibre and calcium. As well as being packed with antioxidants and essential vitamins and minerals.
They are great for digestion, inflammation, strong bones, energy, healthy skin/hair/nails, blood sugar levels and immune system support.
The seeds absorb liquid and form a gel. You can either leave it as it is like in my other chia pudding recipe or blend them like in the recipe I’m about to give you. I love it either way and find that chia seeds fill me up for ages.
What you need:
- quarter cup chia seeds
- cup of almond milk (maybe more)
- 5/6 frozen strawberries
- tablespoon maple syrup
What to do:
Soak the chia seeds in the almond milk for at least an hour. I usually leave in the fridge overnight if I’m intending to have for breakfast. Give it a stir and add more milk if needed. Add all ingredients to your blender and blend until smooth.
I’ve also topped mine with Coyo Coconut Yoghurt and toasted coconut shreds but that’s optional 🙂
You could also try using other fruit. Mango and raspberries work well too!
