Red Lentil Soup with Veggie Topping

Soups are a super easy and nutritious thing to make. This red lentil soup is one of my favourites. If you top it with extra stuff too it makes it more filling.

Lentils are also a good source of protein.

Ok so, What you need:

  • cup of red lentils
  • pint of veg stock
  • 3 celery sticks
  • 2 carrots
  • 1 onion
  • 2 cloves of garlic
  • 1 red pepper
  • fresh parsley
  • broccoli
  • mushrooms
  • potatoes
  • coconut oil
  • himalayan salt
  • pepper
  • cayenne pepper
  • turmeric
  • cumin
  • garlic powder
  • tamari soy sauce

 

What to do:

Chop up 2 celery sticks, 2 carrots, 1 onion, 2 garlic cloves, 1 red pepper.. Saute them in coconut oil until tender.. Add the cup of red lentils and pint of veg stock.. Plus the salt, pepper, cayenne pepper, turmeric and cumin.

Simmer for about 50 minutes..

Add some fresh parsley and allow to cool before blending.

For the topping..

Potato croutons – Chop up the potatoes into small chunks, mix with coconut oil, himalayan salt and garlic powder.. roast in the oven for about 30 minutes, until looking crispy.

Saute some broccoli, celery and mushrooms with a little bit of tamari soy sauce.

Add the veggies, potato croutons and more fresh parsley to your soup et  voila!!
