It’s coooollllllld, therefore it’s time to get the soups on the go!
This Minestrone soup is full of nutrients and flavour. I find that soups taste even better the next day when the flavours have all settled together.
What you need
- 4 cups veg stock
- 2 tins chopped tomatoes
- cup of cooked soup pasta
- green beans
- 6 small vine tomatoes (approx)
- red kidney beans
- cannellini beans
- 2 cloves garlic
- handful fresh parsley
- handful fresh basil
- cayenne pepper
- herbs de provence
What to do:
Chop your veggies and saute the onion in a pan for a few minutes, then add the garlic… Add the carrots, leek, celery, courgette, green beans and saute for a couple of minutes.. Then add the vine tomatoes and saute until softened.
Add to a saucepan with the veg stock, tinned tomatoes, salt, pepper, cayenne pepper and herbs de provence.. Simmer gently for 45-60 minutes..
Five minutes towards the end add the pasta, kidney beans, cannellini beans, parsley and basil.
Voila! You don’t even have to blend this one!
Top with some more fresh herbs.
