Chocolate Caramel Iced Coffee.. Yes, this really is as good as it sounds AND it is a much a healthier version.
There are two steps to this, as you will have to make the caramel first. You can then keep the caramel in the fridge and use it for other things too, like adding to chia pudding, porridge or spreading on fruit.
So, to make the caramel..
In boiled hot water, soak approximately 10 medjool dates.. or more if you want to make a bigger portion. Soak them for approximately 10/15 minutes, then drain the water out, leaving a bit to help them blend easier. Then, yes blend the dates and water until smooth. Now you could leave it at that or you could also mix in a tablespoon of either peanut butter, almond butter or tahini and also a tablespoon of melted coconut oil.
That’s the caramel done.
For the coffee..
Use a good quality coffee and mix up a teaspoon with a quarter of a cup of hot water, then leave to cool.
Then, blend with..
- almond milk
- teaspoon cacao powder
- tablespoon of the caramel
- half a frozen banana (optional but makes it more creamy so I recommend)
