Chocolate Caramel Balls

I made these treats for a Halloween party and they went down very well. At Halloween I stuck crosses in them but I thought beings as it’s Christmas time, i’d make them look pretty with some rose petals.

They are easy to do and only need a few ingredients, that are..

  • 12 medjool dates (feel free to use more to make more)
  • tbsp almond butter (not essential so can leave out if you have a nut allergy)
  • dark chocolate bar
  • rose petals or goji berries or sea salt for decoration

What to do:

Remove the stones from the dates and with the almond butter put it in your blender and process until smooth and sticky.

Roll the mixture into small balls and put in the freezer for 30 minutes to harden up.

Then melt the chocolate in a pan and roll the balls in the chocolate, using a spoon to cover it..

When the balls are completely covered, place on to a wire rack and whilst the chocolate is wet, place your decorations on to each ball. You will have to do this quick as the chocolate will go hard straightaway because the caramel has been in the freezer.

 

Put back into the freezer (still on the wire rack) for 45 minutes. Then they are ready to eat.

If not eaten straightaway, they can be kept in the fridge or freezer. It’s personal preference. If you like them softer then keep them in the fridge, but I personally like them chewy so I keep them in the freezer and take out 5 minutes before I want them.
